...and we wonder why we have lawyer jokes?

The idea is that the high heat makes all coffee taste the same, so you can't tell that you are drinking stale swill, not that it makes it better or worse. It just makes it taste less. Extremes in temperature tend to do that.

Sort of like American beers, except we chill those...
Ok, I understand the argument. Is it specious or is there a reason to accept it as true? FWIW, I have lost my taste for coffee and I drink it now under protest and only for the caffeine (please see my thread Starbucks - Mystery - Conspiracy - Mental Condition)

To be honest the temperature of the coffee is not as important as it once was. I used to like McDonalds coffee ok. It wasn't my favorite. I have always hated Starbucks. I used to think McDonalds coffee was head and shoulders above Starbucks so I'm not sure if I can agree with you. Like I said, the argument sounds specious.

Coffee is one of my hobbies, so I feel mildly qualified to field this one.

Coffee is generally agreed to be best brewed at around 93 degrees celsius. Anything over that and it's burnt, which leads to a relatively strong bitter flavour which obscures the nicer flavours. This is why you should let your water come off the boil for a minute or so before you let it touch the grounds if you are making plunger or filter coffee, and why coffee siphons are the go for coffee enthusiasts who aren't doing espresso.

If you're going to burn it anyway it doesn't really matter whether your coffee is good coffee or rotten coffee, and at least the awful taste will be consistent. Since most people can't tell decent coffee from swill, commercially speaking you lose little or nothing by doing so. Serious coffee drinkers won't be drinking McD's coffee except as caffeine of last resort anyway.
