I'm a couple of thousands kilometers away from the book, but according to what I remember from it, Umayyad's conquered Persia but the Persians stayed largely non-muslim for long time and the muslim population was mostly concentrated on several cities. So, most of the actual conversion happened during Abbasid time and it took decades if not centuries.
