I guess that the Reformation, Counter Reformation and the 30 Years War, followed by start of European colonisation meant there were other employment options. And the Black death beforehand.

Unisexual environment, voluntarily? No surprise how that goes. One of my cousins joined a monastic order because he didn't want to pretend he was interested in girls. He told me his life was much better when he stopped "pretending". Suicide is another option he considered.

HMS Escher doesn't seem to be a real vessel. The Internet keeps telling me that I maybe mean the HMS Archer.

One of my college friends converted to Catholocism and became a priest for that reason. I didn't know that until decades later.
