The Vatican picks and chooses what science it wants to accept just like any other religious institution. The fact that they happen to come down on the correct side on this one doesn't impress me much.

Given that the Vatican does not have a scientific "platform" as such, what exactly were you referring to when you said that it "picks and chooses what science it wants to accept"?
