Best as in most stable, most useful, etc.

I bought a new iMac to replace my ever-erratic PC, and want to start using IRC...

Or Ircle.

If you just want to walk into a room and chat, Colloquy is more straightforward and 'friendlier', but if you need to do more - eg. moderate a room or set up auto-greets, Ircle's your best bet as Colloquy is very awkward when it comes to doing anything more than basic chatting.

I don't know a whole lot about IRC; I've been using a set of chatrooms that are hosted on a website, and only recently managed to work out that it was some sort of general network rather than just something that site had set up.

Basic chat has been okay so far, but I'm getting into slightly more advanced stuff like changing my whois information, how my nick appears, that kind of thing. Moderating and such is probably a bit more ambitious than I need for now at least, but so long as it's reasonably easy to use for basic chat I don't mind having lots of extra features available for the future as I learn what I'm doing.

Speaking of which, is there a helpful online "IRC for dummies" kind of a thing anybody knows of?

Try new2chat. It's a little out of date in places - for example, the reviews section for Macs doesn't even mention Colloquy - but there's some decent info there.

Snak is what I used back when I actually used IRC. It was great.

I hear BitchX for the Mac is good, but I haven't seen anything from apple since the IIe, so not sure. If you like your IRC w/o GUI, you'll like it.
