How does this magic trick work?

because if you take any two digit number and add it's components together, and subtract them from the original number, you will get a multiple of 9. And the magic trick knows this so if you look at the chart, all of the numbers that are multiples of 9 will have the same symbol.

edit: except for the numbers that are impossible to have as an outcome: anything above 81.
 
Ok, the thing I didn't pay attention to is the sequence of multiples of 9 - the symbols are the same.
